      Hi Caitlin!

There are several reasons (because there are different types of joint “clicks”). The most common one is because the joints have a liquid that sometimes gets sort of air bubbles inside. When we make certain moves, the bubble gets compressed and we literally hear pop when we force that gas into liquid form again. That’s why usually we can only do it once and have to wait to pop them again, it takes time for these bubbles to form.
